KARUNA CHOCOLATE

We are Katya and Armin, South Tyrol’s bean to bar chocolate pioneers.  We are the first in the region to produce organic chocolate directly from the cocoa beans.  We sort, roast and grind selected beans from around the world in order to produce aromatic and puristic chocolates along with a variety of cocoa butter products in small batches.

ABOUT US

In 2014, while living in South India, we were introduced to locals growing and producing cocoa. We immediately became interested and learnt about hobbyists in America that were making chocolate by hand, similar to craft beer home brewers.  Excited about this new hobby, we soon started to make chocolate using basic tools. When we returned to South Tyrol, we discovered that no one was producing chocolate directly from the raw material and there were only a few artisan manufacturers in Europe. The idea of turning our hobby into a profession was the next logical step. Many months of intensive research followed with Armin working on recipes and techniques late into the night. It soon became a family project: Armin’s brother, Lorenz, created the design of the boards and packaging, whilst his father, Roman, generated the graphics. In October of 2018 the time had come. Our first products were available for sale in South Tyrol. Making fine chocolate is a matter of the heart for us. We are constantly researching and experimenting trying to deepen our knowledge about cocoa in order to make the best possible chocolate from the best raw materials.

OUR INGREDIENTS / RAW MATERIALS

We only use ethically and organically grown fine cocoa beans from Latin America, Asia and Africa. As a sweetener, we use fair trade organic raw cane sugar from Itajá, Brasil. The organic cocoa butter we use is pressed from Arriba Nacional cocoa from the area of Los Rios and Esmeraldas in Ecuador and Nacional from Peru. For our white chocolates, containing fruit we use de-oiled almond flour from organically grown almonds.  The fruits are organically grown and freeze-dried.

NEW: Our packaging is 100% ecological. It`s free from plastic, chemicals, heavy metals. We use certified natural papers and the print is done via Risograph screen print using vegetable oil colors. The inner foil of our bar is compostable.

Starting from the raw material, the cocoa bean, the whole process of production is carried out in small production batches. Due to the industrialization of chocolate production, the job description of the artisanal chocolate maker disappeared in the 1950s. Typically, today’s chocolatiers and most chocolate companies work with an industrially produced intermediate, cocoa mass, or couverture. Starting in America, about 20 years ago, the bean to bar movement has grown significantly as a niche area of confectionery production and offers chocolate lovers high quality, aromatic and mostly puristic chocolate, which is different than the large industrial brands.

Cocoa origin: This fine flavor cocoa is an absolute rarity. It grows in the mountains of the Urubamba valley in the Quillabamba area. There are many over 100 year old trees in that area. According to experts this cocoa might be the forefather of many cocoa varieties. It has a huge range of flavors and aromas. The company Asocasel ferments and dries the beans of local farmers. Original beans have launched this project, is supervising it and export the beans.

Tasting notes: Strong fruit flavors, a nice acidity and low in bitterness.
